She’s baaaaccckkk!

Hey Peeps,

Yup! I know, I know! My name should just be changed to Mrs. M.I.A. But with life’s changes comes uncertainty. And Lord knows a lot has been uncertain for me these past couple of weeks! There’s just been a lot on my plate (pun intended!). But, I’ve managed to keep at the things that are most important right now (not that my blog isn’t important!!).

Since the last we spoke tons has happened! I think you all had heard about my 5k that I registered for that is on June 27th (Hubby’s bday!!). Well, in addition to that one, I decided to take part on the Weight Watchers 5k Walk-It-Challenge! My wonderful leader Tanya decided to put together a couple of races for some of her members to attend. Once I heard about it, I knew I had to take part! And I figured I could even use this as preparation for my race on the 27th.

So, June 6th was the date.  The day came and I never thought I would be so nervous!!! The hubby aka my supporter, photographer, cheerleader, and water fetcher was amazing. He knew all the right things to say to me to calm my nerves. LOVE YOU BABE! And then I realized that I wanted to simply use this race as practice and pace myself to just finish!

The race was held in Dorchester. I grew up in Dorchester and was very familiar to the area but definitely do not remember the streets being so HILLY! So, I took my advice.  I did power walk a couple of times to catch my breath but once I took the loop around for the second half of the 5k, something came over me and I bolted! My official time was 37:04 minutes!!!!!!! I couldn’t have been more happier! I had only practiced for the race a total of 3 times and never managed to get my time under 40 minutes. I was thrilled and knew this would prep me for my June 27th race.

Hey Everyone,

Sorry for being so MIA these past few weeks. I have been trying to get my life together after myself, my daughter, and the hubby being sick!  I had to take some time off of work and get things together before I could devote my time to anything.

And once I did return back to work, I received some news that no one is ready to hear. I will be losing my job as of June 30th!!! 😦 I currently work as a Case Manager at a youth organization where we work with youth who are trying to attain their GED.  Being a non-profit, funding is EVERYTHING! And although we had some idea that this day would come, it still is hard to hear! And as you can imagine, it was time for us to think what options would be best for us. I am about 90% sure that I will be going back to school and utilizing this time off to go back full-time, bang it out, and move on to bigger and better things!

I hope you all understand my means for being away for so long.  I am a firm believer that everything happens for a reason and I am really looking forward to going back to school and getting ready to switch gears and a new career soon after!!

Now, back to food…

Yesterday the hubby and I went out for lunch on my break. I honestly just needed to step away from the PC and grab something to eat.  The hubby was nice enough to join me! We decided to go to Panera Bread. Something fast and some-what healthy.

I had the U-PICK-TWO:


I decided to go with 1/2 of the Chopped Chicken Cobb Salad, and Half of the Meditterranean Veggie Sandwich that had Hummus, Feta, and tons of yummy veggies. I was so satisfied with this lunch! Yum!

This past weekend and yesterday has been beautiful in our town. We did tons of this all weekends long:

In honor of Earth Day (and my wallet!)



 Earth Day can never go unrecognized with me simply because it is a day before my birthday!  But every year, when I think about Earth Day, it brings me back to grade school when we would go outside to plant something and the green recycling bins that would appear a couple of months beforehand.

Yesterday, I thought to myself what was one thing that I could do to make a difference when it came to re-using in specifics! And easily, I thought of my daily trip to Dunkin Donuts. Almost everyday, I stop in at Dunkin Donuts and purchase my Medium Iced Coffee. The hubby is never pleased with me on this decision and even this morning said to me

“Do the math for a whole year and see how much money you would save!”

To answer that question – $850.45!!!!!!!!!!!!!!!!!! Yup, you read right. My coffee which costs me a measly $2.33 a day, adds up to $850.45 a year!!!!  So not only was I making a choice on helping the Earth by re-using, but I was also helping my wallet by not buying!!!

And to help with both of this, I bought….

I actually saw this in the Bed, Bath, and Beyond ad and knew I had to have it! I made a batch of my own DD coffee this morning and it was just as good as my usual. Here’s to the Earth and my wallet!!!

Along with my coffee this morning, I had a wonderful Green Monster!

I was finally able to try my samples of the Green Super Food powder. This morning I tried the Goji and Acai flavored one and although it did enhance the flavor, it left it with a gritty texture that I wasn’t to happy with 😦  But, I must say that it kept me fully satisfied way beyond my usual lunch time!

Planning on making some Blue Cheese Burgers for dinner since it is a perfect day for grilling! Check back later! Go out and do something for the Earth!!

Breakfast for Dinner…and the winner is???

Hey Everyone,

Sorry for being MIA all weekend but the lil one has been super sick! Ear infections stink!

We had planned on having a great Sunday breakfast, just us. But that quickly changed as most of our Sunday was all about tending to the lil one.  So, tonight I totally forgot to take something out of the freezer and so I thought, why not Breakfast for Dinner! My husband (the egg-lover) was totally okay with this idea.

And boy was it yummy…

The pancakes were a new try for us. It was the FiberOne mix. I have to say that I was highly impressed with this mix. It was extra fluffy and moist. I did add some vanilla extract and cinnamon just to enhance the flavor a bit.

I did have another slight fail with the eggs.  I tried to make something like a frittata with egg whites (carton kind) but it came out really rubbery. I guess these types of egg whites aren’t best to use in the oven?!?

We also had some fruit salad and some Turkey Breakfast Sausage! Great way to end the long weekend.

Can you believe that I was home all day, mostly cleaning, and totally forgot to tune into the marathon????!!!!??? In all the years that I can remember, I’ve at least caught a glimpse of the Marathon. But not today 😦 I guess highlights on the news tonight will have to do.

Oh, and did you all hear that The Ellen Show was in Brighton today!!!?? She had a twitter contest going asking folks to show up to a Brighton CVS with three creative things that begin with the letters C.V. & S. Supposedly it was her biggest twitter competition thus far! Prize worth thousands. Wish I was close enough to make my way over!!

Did I just do that??

Hey Folks!

Beautiful day out in Mass today (specifically Brockton). Can’t wait to get out of this office so I can enjoy some time outdoors!!!

Before I get into what exactly I got myself into yesterday, let’s back track a bit to an amazing dinner I made; courtesy of my big sis Lili! She’s made this plenty of times before and we can never get enough of it. This recipe is adapted from a recipe she found in a magazine that we just can’t remember the name of. Supper Yummy dinner:

Seafood Pasta

Sorry for the bad picture! This had to be taken on my phone at work (leftovers) since I was a bad blogger and left my memory card reader at home 😦

Ingredients include:

  • Shrimp (1/2 lb)
  • Scallops (1/2 lb)
  • Spinach (3-4 cups, could be more cause they wilt down a lot)
  • Whole Grain Pasta (1/2 a box)
  • Cherry Tomatoes
  • Gorgonzola Cheese – 3 tablespoons (or to taste)
  • Low Fat Pesto Sauce – 3 tablespoons (or to taste)
  • Various seasonings (salt, pepper, dill, garlic powder, onion powder, etc.)

It’s really simple to make! Just saute the shrimp and scallops with the said seasonings. Once they cook threw (shrimp is a light pink) add in the spinach to wilt. In the meantime, have your pasta cooking. Once pasta is done add that to the seafood mixture and add in the gorgonzola and pesto and cherry tomatoes and mix it all together!

So, about yesterday. As you all know yesterday was my Week 1 Day 2 training for the C25K program. My sister and our friend Manny was already planning their run so I decided to join them. We have a local park that if ran 1/2 way is 2.2 miles and the entire path is 3.6 miles.

Once we got there, my sister persuaded us to run the entire thing!!! I insisted that I was staying on track with my training and was going to run for 60 secs and walk for 90 secs alternating for a total of 20 minutes!! AND THAT’S THAT!!

Yea…RIGHT! Not even 5 minutes into my run, I got frustrated with having to hold out my iPod to see where I was on time. I said “FORGET THIS” and just started jogging. And I’m sure you can forsee the ending to this story…

I did the entire 3.6 mile run in 45 minutes!!!!!!!!!!!! WOOOHOOOOOOO! I was so proud of myself. I stopped a few times to catch my breath but the majority of it was a slow-paced jog. Never in my wildest dreams did I think I would be able to finish that entire path! It always seemed so beyond what I could do at this point. But I did it! And so did my sister and Manny! It was a first time for all of us and I am so glad that my sister pushed me to do it.

A mini FAIL!

Hey Everyone,

Yesterday I was super excited to get home so I can start on my dinner! The hubby and I love us some Indian food.  The flavors are amazing and pairing it with either rice or noodles is always a good combination.

Wild guess on what was for dinner?!? Anyone?? LOL. Yup, your right…Indian Food.  This was the star of the night: 

Chicken Tikka Sauce

I was talking to a co-worker about Indian Food one day and she mentioned a Tikka Sauce that she tried recently and loved. So, I went on an adventure to find it. Adventure cut short when I found it at Stop & Shop! Easy enough.

We decided to give it a try with Rice Noodles. This is where the Fail comes in 😦

I’ve never made Rice noodles before and didn’t realize how quickly they cook (should’ve known better!). So instead of waiting until after the chicken was ready, I started cooking the noodles at the same time as the chicken…FAIL!

The noodles soaked up all of the liquid and became extremely mushy! Yuck! I hate mushy noodles of any kind.  But, we made do and the sauce ultimately made up for the entire thing!

The sauce was thick, rich, and you could even see the onions, and other ingredients used. It wasn’t purred into just sauce! It was yummy!

The sauce was a bit of a dent in the calorie/fat department. So I tried balancing that out a big with a whole lotta greens!!! Roasted Asparagus and brocoli! Yum!

The lil one really loved the dish too.  I thought it would be a bit too spicy for her but she devoured it. And she loves her greens too. Love that she explores with food! Makes me a happy mommy!

Today is day 2 of the C25K training program!!! Can’t wait. Instead of hitting up the treadmill, I will be making use of this nice weather and run at our local park. Hope I can still manage!
